Further adventures in homemade hot sauce:
Because I am a huge nerd Based on the result of that homemade Rooster Sauce last night I attempted to create a hotter variation of the recipe.  I followed the same method, but made the following substitutions:
I used yellow jalapenos instead of fresno peppers
I substituted a tablespoon of sugar with molasses
I reduced the amount of vinegar to 3/4 cup
I added fresh basil, because we have a billion pounds of it from the Farmers Market
The resulting batch was very different and very hot.  The is probably a result of the pepper variety and because there was less brine for ingredients to mellow in.
The addition of the basil and molasses combined with the long blend time made the colour turn a darker shade than I had expected.  With that said, this stuff tastes good… hot and fresh.  If I were to do this variation again I would add more sweetness and more herbs?  Maybe?
Either way, I now have a lot of hot sauce at my house.  Come over with a cup and take some home.  Please.
